My name is Nishar. I am Indian Muslim from Vadodara, Gujarat. I have always loved food and grew up around great people who introduced me to cuisines around me. At 18, I joined a university to study biotechnology for my love for science; I dropped after I found my calling and passion in food and cooking. While pursuing my Bachelors, I read and discovered the world of great restaurants that I aspired to work at and be inspired by. Read deeper into Indian food history and food culture. I worked on R&D projects with my college and did an internship in Hyderabad where I was mentored into cooking Indian food. After Graduation in 2019, I got the opportunity to work for a year in the United States, where I learned nuances of french techniques and food from the Cajun country and Bayou. I had a lucky brush with Vietnamese and Japanese cuisines. Returned home in 2020 to the specialty coffee shop “Modernist Coffee” I co-founded. We made an R&D kitchen that is dedicated to the pursuit of pioneering change in my small city. Experimenting with fermentation and working on bringing new ideas by using local ingredients to create a menu and promote Indian specialty coffee. We also were the first cafe to serve and promote Indian robusta by putting A single origin speciality robusta as our primary espresso.
I continued experimenting there before moving to Canada to pursue a post-grad in 2022.
I am tenacious and organized as a cook. I fold my towels, I cut my tape, and line up my knives. Driven, as a learner to ask better questions and find answers, a curious polymath who enjoys exploring facets of cooking and life. While the learning journey will never be over, this opportunity would be horizon widening. There is nothing in this world that I enjoy more than cooking and sharing Indian food. The goal is to have an Indian omakase restaurant with no menus and food cooked only with the season’s produce. To present and showcase the complexity of the cuisine. There are still a lot of new things to learn and explore. The work is far from done.
